Bong Style Stir Fried Asparagus with Potato



It's Spring and asparagus at its peak now packed with nutrients and fiber. There are so many dishes can be made with asparagus besides roasting, grilling or steaming. I never heard of this vegetable in India but it's versatile. So I cook asparagus in Indian style often. Stir fried Asparagus with Potato is a quick side dish and perfect for busy week days that goes well with steamed rice and lentil Stew.

Ingredients~
1 pound asparagus
1 medium potato, cut into strips or small diced
1/4 tsp nigella seeds
2 dry red chili
4 tsp. oil
1/4 tsp. turmeric
1/4 tsp. salt

Method~ 
Cut green part of asparagus into 1 1/2 " pieces or cut into medium thin slices. Discard tough white stem ends. Heat oil in a large pan on a medium high flame. Add nigella seeds and dry red chili. When they release nice aroma and begin to darken add potato and asparagus to the pan. Sprinkle turmeric and salt. Stir fry for couple of minutes. Turn the heat low and cook with the lid on for 8-10 minutes or until tender but firm. Remove from the flame and serve with warm rice or roti.
