Bhel Puri is a pretty addictive yet simple Indian street snack or beach snack of Mumbai beaches. It's a type of chat containing crispy puffed rice, spiced fried lentils-peanuts-chickpea flour noodles mixture along with some veggies, seasonings and some sweet n sour condiments. Everything is well mixed to serve immediately. Bhel Puri has a crunchy-creamy texture with the perfect balance of sweet, tangy and spicy condiments that is hard to resist. There are many styles of Bhel Puri and it can be made with just a few things on hand as per personal preference. No need to buy the the pre-packaged Bhel Mix. Uttapam and Vegetable Paniyaram

I made so many batches of Dosa batter in these lock down months even South Indians would be surprised. My kids loves to snack on them without any accompaniments. I shared Dosa and explained well here in the Dosa post. Using one simple Dosa batter so many things can be made. Uttapam is one of them topped with onion and and other veggies served alongside Chutneys and Sambar are perfect lunch or dinner for us. Uttapams is kind of thick pancake and soft, fluffy texture. They are So tasty. If Chutneys and Sambar are finished but some batter remains I don't mind to savor Uttapam just like that.

Mushur Dal & Chola-Mator Daler Bora/Red Lentil Fritters & Husked Black Chickpeas-Yellow Split Peas Fritters

Lentil fritters and Lentil Curry with plain steamed rice is a soulful combo in Bengali households. They are so tasty and they only require minimum pantry ingredients, yet full of crispy-crunchy deliciousness. There are lots of variations but these two types of fritters are very popular for most Bengali households. They can be served as starter with tea and puffed rice too.

Dahi Bhalle Chaat

Doi Bora/Dahi Vada or Dahi Bhalle is a very famous Indian street food. White lentil fritters are soaked in whisked seasoned yogurt and delicious chutneys and topped with some crunchy sev/gram flour fritters. I usually make a big batch of fritters and serve some for lunch or dinner and another day I make chaat with some salad ingredients. This recipe is more like a salad where soaked fritters/vadas are broken into small pieces, mixed with boiled peas, boiled potatoes, cucumber, apple (optional) onions and tomatoes, chilies, cilantro/coriander leaves and and some dry spices then drizzled with whipped seasoned yogurt, green chutney, tamarind chutney and topped with crunchy fried crackers and gram flour fritters. It can be served as a starter or just as a meal.
