Singapore noodles packed with curry flavor for quick lunch or supper is great for any days. According to Wikipedia, it's a very popular Cantonese style noddles in Hong Kong with no connection with Singapore. Stir fried colored vegetables along with rice vermicelli, shrimp, egg and other meat are used in this easy cooking process that takes only 30 minutes. The classic curry sauce is a salty, spicy but not too spicy and slightly sweet concoction. I double for more kick. This is absolutely delicious to savor leftovers for the next day and it's definitely a keeper.
Ingredients~
(US customary units)
8 oz. rice vermicelli
3/4 lb. small shrimps
4 large eggs
1 cup of each red, green bell pepper,julienned
1 cup green beans into 1 1/4 inch pieces
1/2 cup carrot, julienned
1/2 cup onion,julienned
1 tbsp minced ginger
1 tbsp minced garlic
1 tsp thinly sliced fresh hot chili
1 cup sliced green onion
1/2 tsp salt
5 tbsp oil
1 tsp curry powder
2 tbsp low sodium soy sauce
1 tbsp Shaoxing wine(optional)
1 tbsp rice vinegar
1/2 tsp sugar or to taste
1/4 tsp chili flakes
*Note~Double the sauce to drizzle on top.
Method~
Make the sauce with the last five ingredients. Bring a large pot of water to a boil. Add vermicelli and little salt and cook according to package directions. Drain, pour 1 tbsp oil, gently toss to coat well to avoid sticking together and set aside. Beat eggs with little salt. Heat 2 tsp oil in a frying pan and make omelet, then cut into slices; set aside. Heat 2 tbs. of oil in the same pan and quickly stir fry shrimps over high heat with 1/4 tsp salt and 1/4 tsp curry powder and keep them aside. Heat the remaining oil and quickly stir-fry sliced chilies, ginger and garlic, then add in green beans on medium heat. Cook till tender for about 3-4 minutes. Add in bell peepers and carrots and cook for 2-3 minutes. At last add in onions, remaining curry powder, salt and stir fry for a minute. Add in the noodles and the prepared sauce. Toss everything well and add in the shrimps, 3/4 cup green onions and the eggs. Stir fry and toss the noddles mixture for a minute over medium high heat. Have a taste test and adjust seasoning and spiciness as per taste. Garnish with remaining green onions and serve hot.
