Apple Cake

It's apple season and fall means apple desserts. Last night, I made this moist and buttery cake with finely chopped apples, topped with sliced apples, a perfect fall cake to complement with a cup of coffee in the morning or as a dessert with a scoop of vanilla ice cream. House smells so good and it's hard not to have seconds.

This recipe is very simple to follow with basic pantry ingredients. I use sometimes apple brandy if I have it, or else I just use pure vanilla extract. The cake is moist, buttery and not overly sweet. That's the beauty of baking at home. I can control how much sugar I want to add that matches out taste buds. 


This cake can be made in the loaf pan, spring form pan or regular cake pan. Sprinkle with powdered sugar if  you like on the top of the baked cake. Cinnamon powder can be added as well. Use apple brandy or rum in the batter. It's gonna taste wonderful whatever flavor is added. Here is my take on apple cake.


Ingredients~
(US customary units)
1 1/2 cup all purpose flour +1 tbsp
3/4 cup + 2 tsp sugar
1/2 cup unsalted softened butter 
1/4 cup sour cream 
3 large eggs at room temperature 
1/3 cup milk 
2 tsp pure vanilla extract
1/2 tsp baking powder
1/4 tsp baking soda
2 tsp freshly squeezed lemon juice
2 cups chopped gala apples 
1 1/2 cups or more sliced gala apples
1 tsp butter +1 tbsp flour for pan

Method~
Preheat the oven the 350 degrees Fahrenheit. Gently rub chopped apples with 1 tsp lemon juice and 1 tsp sugar. Follow same process with the remaining juice and sugar for the sliced apples from turning them brown. 

Butter the cake pan and sprinkle flour all over pan and tilt as needed to make sure it coats well everywhere inside the pan.

Mix the flour baking powder, soda, salt together and set aside. Cream butter, sour cream and sugar together in a large bowl until light and creamy. Add eggs, one at a time until well combined. Drain liquid from the chopped apples and sliced apples.Add in drained liquid, milk, vanilla extract and mix everything well again for a minute. Add the flour mixture 1/4 cup at a time to the wet mixture and mix well just until well combined. Mix 1 tbsp flour with chopped apples and dump in the wet batter, Gently fold the mixture. Do not  over mix the batter. 

Pour the batter into a regular or a spring form pan. Arrange apple slices on the top of the cake batter anyway you want. Tap the pan a  couple of times on the counter top and place in a baking sheet. Bake for about 60 minutes until tooth pick comes out clean. 

Let it cool in the pan for ten minutes, then remove from the pan and cool in a wire rack. Then keep it covered with a aluminum foil to keep it moist. Serve warm cake with a scoop of vanilla ice cream or with a cup of coffee or tea.
