Spaghetti & Mini Chicken Meatball in Creamy Vodka Sauce


Spaghetti alla vodka or pasta alla vodka is an Italian American pasta dish is widely popular all over the world and adding meatballs in the sauce takes it to the next level. The mini chicken meatballs with mildly spiced aromatic vodka sauce is slowly cooked to perfection and it is great with any kind of pasta product.



This restaurant style pasta dish is very easy to make chicken is truly a comfort food and a crowed pleaser. Vodka enhances the flavor without making it alcoholy. Simply leave out vodka if you don't want it. Sauce and meatballs are gluten free. This recipe makes three servings. Here is my take on Spaghetti alla vodka with chicken meatballs. 

Ingredients~
For the meatballs~
1/2 lb. ground chicken (thigh meat)
2 tbsp grated Pecorino Romano or Parmigiano Reggiano cheese 
1/4 cup mashed potato 
1/4 tsp granulated garlic
1/4 tsp dried onion   
1/4 tsp Italian seasonings 
1/8 tsp salt or to taste
1/4 tsp red pepper flakes
4 tbsp olive oil

~For pasta
8 oz. whole wheat or white spaghetti

For the sauce~
1 lb. vine ripe crushed tomatoes
1 tsp minced garlic
1/2 onion, diced white onion
1 tsp Italian seasonings
1/8 tsp red pepper flakes
1/3 tsp salt or to taste
1/4 tsp sugar
1 tbsp tomato paste
1/4 cup Vodka 
1 cup low sodium chicken stock
1/3 cup cream

Method~
Mix all together meatball ingredients except oil. Use a small ice cream scoop or a tablespoon to scoop meatballs and roll them. Heat oil in a large pot and fry each sides for 30 seconds over medium high heat. Remove from the pan and set aside. Cook spaghetti according to package direction and set aside.

In the same pan add onion, minced garlic and saute for a few minutes. Add in chopped tomatoes, salt,seasonings, crushed pepper and cook until just little mushy. Blend it and return to the pan. Pour in vodka, chicken stock, sugar, tomato paste. Stir well and cook for 5-6 minutes. Add meatballs and simmer for 10 minutes. Taste and adjust seasonings. Add more liquid if needed. Pour in heavy cream and cook for another 5 minutes. Add pasta and toss well. Sprinkle more cheese and seasonings on top. Enjoy gorgeous Spaghetti & Mini Chicken Meatball in Creamy Vodka Sauce.
