Spicy Baked Bong Style Catfish


Baked fish with vegetables is our family favorite. It's a quick and simple way using very basic ingredients to make a meal for lunch or dinner. I marinate fish and vegetables for 10-15 minutes; then simply bake them with perfection. It's very healthy, flavorsome, tender, juicy and absolutely out of this world with simple Indian spices. If you love keto friendly fish meal, do give it a try. It is a perfect accompaniment to brown rice if you want to add some whole grain.


These fishes are fresh from the pond. Our local pond is stocked by catfish and bass during summer. It's really fun to catch catfish and other fish. They are amazing as fish curry. fried, barbecued and baked. Today I am sharing this baked version that I made twice this week with sweet pepper,onion and tomatoes. We truly devoured it for dinner! You can use any fresh fish steaks of your choice, just make sure it is very very fresh.


Ingredients~
6-7 pieces good size catfish steaks( about 1 1/2 lb)
1/4 cup strained yogurt
1 tbsp freshly squeezed lemon juice
2 tbsp mustard oil
1 tbsp onion paste
1 tbsp ginger paste
1/2 tsp garlic paste
1 tsp salt or to taste
1/4 tsp turmeric powder
1/4 tsp hot chili powder or as per heat tolerance
1/4 tsp paprika
1/4 tsp cumin powder
1/4 tsp coriander powder 

Vegetables:
3 big bell peppers 
2 medium onions, cut into chunks
2 cups cherry or grape tomatoes

Method~
Mix all the ingredients together except oil and fish. Rub well 3/4 marinade all over fish pieces. Transfer to a baking sheet pan. 

Preheat the oven to 450 degrees Fahrenheit. Mix saved marinade with vegetables. Arrange fish steaks and veggies in a baking sheet. Drizzle with oil. Bake for 15 minutes until fish is cooked through. Let it cool little bit. Garnish with lemon/lime wedges and cilantro. Serve over brown rice or quinoa or just with veggies. It's as tasty as it looks. Happy cooking!
