Strawberry Ice Cream



Here's presenting easy homemade 4 ingredients  no-churn Strawberry Ice Cream. I make this simple dessert when strawberries are in season. Nothing is better than homemade ice cream in hot summer days. This rich and creamy ice cream bursting with fresh strawberry flavor is one of the best summer treats. 






It takes a little bit of effort to make this delicious ice cream. Strawberries are cooked down to the almost jam consistency, cooled and chilled in the refrigerator, heavy cream is whipped till stiff peak then everything is folded nicely and frozen at least for 8 hours. This little effort is worth to enjoy this creamy goodness. Oh so delicious ice cream on hot summer days!


Ingredients~
1 lb. fresh strawberries
1 1/8 cup raw sugar  or regular white sugar(as per taste)
1 1/2 cups heavy cream
2 cups whole milk

Method~
Place whisk attachment or beater and the bowl in the fridge for at least 2 hours. Boil milk in a heavy bottomed pan till it is reduced down to 1 1/2 cups. Let it cool then chilled in the refrigerator. Wash, remove stems from strawberries, pat dry with a paper towel and cut them into small pieces. Save 3/4 cup. In a medium pan cook remaining strawberries and sugar until thickens like jam consistency for 8-10 minutes. Let it cool then chilled in the refrigerator. 

Beat heavy cream in the chilled bowl till stiff peak. Add in strawberry mixture, strawberry pieces and chilled milk. Fold nicely for 2- 3 minutes until everything well incorporated. Transfer to a freezer safe container. Place a plastic wrap on top of the ice cream to avoid ice crystal and put a lid on it. Freeze for at least 8 hours. Scoop and serve. Enjoy strawberry deliciousness!
