Chicken Marsala


Chicken Marsala is another favorite Italian dish. Pan seared chicken fillets in a creamy mushroom wine sauce is simple and quick for week night meal yet very elegant for get together. I tasted this chicken dish with angel hair pasta most probably in a family owned Italian restaurant many moons back and that was out of this world. As a foodie I love to recreate lovely dishes I enjoyed in restaurants. 

Marsala is fortified Italian wine. Its golden color and nutty flavor makes this dish very rich tasting. If marsala wine is not on hand use brandy, port wine or sherry that would do a great job for this recipe. Double the sauce and mushroom if needed. Mostly Chicken Marsala Served with any pasta product. For grain free option, sauteed potato, mashed potato and veggies are wonderful sides.  


 Ingredients~
(US customary units)
2 large chicken breasts, skinless and boneless
1/8 tsp salt
1/8 tsp freshly ground black pepper
1 tbsp lemon juice
1/3 cup all-purpose flour
3 tbsp olive oil 

Sauce~
1 tbsp butter
10 oz. crimini or baby bella mushroom, sliced
1 tbsp minced garlic
1/8 tsp onion powder
1 cup dry Marsala wine
1 cup chicken broth
1/3 cup heavy cream
1/8 tsp salt or as per taste
1/4 tsp Italian seasonings
1/8 freshly ground black pepper 
Fresh parsley for garnish if you have on hand

Method~
Cut the each chicken breast in pieces. Wrap in a plastic bag or wrap and pound with a meat mallet to flatten each pieces. Season with salt, pepper and lemon juice on both sides and set aside for 10 minutes. Heat the oil in a cast-iron or heavy bottomed steel pan on medium high heat. Lightly dredge chicken in the flour and shake off excess flour. Sear chicken fillets for 1 1/2 minutes each side just until light brown. Try not to cook through. Remove from the pan and add in butter, mushrooms, minced garlic and saute for 3-4. Pour marsala wine to de glaze the pan stirring well and allow the wine to reduce by half for about 3-4 minutes, the add in chicken broth, salt, black pepper, Italian seasonings, and simmer for 2-3 minutes. Pour heavy cream in the pan. At last add in seared chicken into the pan and simmer just until cooked through, then taste and adjust seasonings as per taste. Serve over seasoned spaghetti, linguine, angel hair pasta or choice of any type of pasta. Sprinkle with fresh parsley. Spoon sauce over the chicken. Serve with seasoned pasta and sauteed vegetables or salads.
