Easy Spider Web cake


This tangy sweet orange cake with whipped cream cheese frosting and a spooky spider web on top using dark chocolate ganache is a delicious Halloween treat. It's so simple to make on short time to satisfy both kids and adult's sweet tooth. All you need is very basic cake ingredients. No fancy decoration is needed. 


Ingredients~
2 cups all purpose flour, sifted
1 cup sugar
3 eggs
3/4 cup freshly squeezed orange juice
1 tbsp. orange zest
2 tsp. baking powder
1/4 tsp salt
1/3 cup unsalted butter

For the frosting:
3/4 cup super cold heavy whipping cream + 1/4 cup
6 oz . 1/3 less fat cream cheese
A few drops of yellow food coloring
1/4 cup freshly squeezed orange juice
1/2 cup powdered sugar
1 oz. dark chocolate pieces
Chocolate sprinkles

Method~
Preheat oven to 350 degrees F and place the oven rack in the lowest position. stir flour, baking powder and salt together and set aside. In a big bowl, beat the eggs and sugar together until very light and fluffy. Add melted butter, orange zest and juice. Mix well until well combined. Now add flour mixture, half cup at a time scraping the sides of the bowl in between. Fold the mixture gently. Make sure not to deflate the mixture. Pour equal batter in two 8 inch baking paper lined pans. Bake for 25-30 minutes. Insert a toothpick into center of the cake while they are still in the oven. If it comes out clean remove from the oven and cool on a wire rack. Let it cool completely before frosting.

While cake is being baked make the frosting. Whip cream cheese with 1/4 cup powdered sugar until fluffy in a small bowl and set aside. Pour 3/4 cup heavy cream in a medium chilled bowl and whip until soft peak forms. Gradually add sugar and yellow food coloring. Keep whipping until stiff peaks form. Scrapes the sides with a rubber spatula. Fold in the whipped cream into the cream cheese. Refrigerate until ready to frost the cake. 

Cut the domed top off the both cakes to make it even layer. Brush first layer with orange juice. Place one layer cake, cut side up on a  plate or cake stand and spread 2/3 cup whipped creamRepeat the same process with 2nd cake layer. 

Now frost outside of cake all around with remaining whipped cream. Smooth it with a offset spatula. 

To make chocolate ganache spider web, heat 1/4 cup heavy cream in a small microwave safe bowl. Microwave for 30-40 seconds. Put chocolate pieces into warm cream. Stir well until chocolate melts. Cool it for a while. 

Fill a zip lock bag with chocolate ganache. Seal and cut a very tiny tip off the corner of the bag. Starting in the center of the cake, pipe all the way around to make spiral shape on top of the cake. Using a toothpick draw lines from the center to the outer edge to make a web shape. gently press chocolate sprinkles on the side of the cake. Refrigerate for 15-20 minutes to set before serving.
