Coffee Ice Cream

I have never made so much ice cream before; because of the Covid-19 pandemic situation around, I am trying to make everything at home. I am sharing another decadent ice cream dessert for coffee lovers. Rich creamy coffee ice cream with freshly brewed dark roast coffee absolutely satiates sweet tooth. It is so smooth, creamy, rich without any topping and it is perfect for hot summer days. 


This ice cream doesn't require ice creme maker like my other ice creams, no occasional churning in between freezing, yet it gives the perfect creamy texture. I make it egg less, without stabilizer and starch. I use dark roast fresh brewed coffee for stronger coffee flavor. Try this simply natural ice creme with four main ingredients only.

Ingredients~
1 1/2 cups heavy cream
2 cups whole milk
1 1/4 cup sugar or as per taste
2 coffee scoops dark roast ground coffee
3/4 cup water
1/8 tsp instant coffee granules(optional) 

Method~
Place whisk attachment or beater and the bowl in the fridge for at least 2 hours. Brew coffee using a coffee maker or French press with 3/4 cup water. Let it cool and refrigerate. Boil milk in a heavy bottomed pan till it is reduced down to about 1 1/4 cups.  Add sugar and boil for 8-10 minutes until thickens. Do not skip this part (if sugar is added while mixing with the heavy cream it may not dissolve completely). Cool it completely and chill in the refrigerator. 

Beat heavy cream in the chilled bowl till stiff peak. Add in milk mixture and whip for a minute, then stir coffee into milk mixture and beat everything together for a minute. Sprinkle instant coffee granules and give it a good stir. Taste for sweetness. If it tastes too sweet add some instant coffee granules mixed with little bit of water and stir to combine with the ice cream mixture. But keep in mind, freezing reduces little bit of sweetness level. Transfer to a freezer safe container. Place a plastic wrap on top of the ice cream to avoid ice crystal and put a lid on it. Freeze for at least 8 hours. Scoop, sprinkle coffee granules(optional) and serve.
