Raddish Mismash/Mulor Ghonto


Mulor Ghonto is a winter dish and very understated dish. Ghonto may literally means mash; but it is more about coated nicely everything together. Winter is an abundance of fresh produce of different colors from leafy greens to all types of vegetables and comparatively inexpensive. Therefore,so many ghonto dishes are made in  Bengali households. It requires minimal spices and enjoyed with rice or roti.


This is an wonderful  side dish for all vegetarian meal and no matter how many non vegetarian dishes are served there will be always some veggie dishes. Sometimes small shrimps are added too for seafood lovers. Otherwise this is simple vegan dish.




Ingredients~
(US customary units)
4 cups shredded radish
3/4 cup small diced potato
1/2 cup grated coconut
1/4 cup green peas
1/2 tsp ginger paste
2 -4 Thai chilies
1/4 tsp onion seeds
1/4 cup oil 
1 bay leaf
1/4 tsp cumin seeds
1 dry chili  
1/4 tsp dry roasted and grounded cumin seeds and coriander seeds
1/4 tsp turmeric powder
1/4 tsp paprika
1/2 tsp salt and a pinch or as per taste
1/2 tsp sugar or as per taste

Method~
Mix 1/2 salt with grated radish and leave it for 20 minutes. Then squeeze out all the water as much as possible. Heat oil in a heavy bottomed medium pan on medium high flame. Add cumin seeds, bay leaf and dry red chili. Once they splutter add in diced potato and saute with tittle salt and turmeric until cooked. Remove from the pan and add ginger paste in the same oil . Saute for a few seconds and add grated coconut and saute for a couple of minutes; then add radish  and cover to cook for ten minutes. Add in potatoes, chili, peas and rest of the ingredients. Stir well to combine everything. Have a taste test and adjust salt and sugar. Serve with rice or roti.
