Cranberry Orange Jam

It's a delicious winter jam with amazing festive color and requires only three ingredients. Freshly squeezed orange juice and zest add a wonderful flavor to this jam. This jam is perfectly balanced between sweetness and tartness. Orange flavor comes trough without overpowering the jam. It's a versatile jam; enjoy it on toasted bread, bagel, flatbread and cracker. It's a perfect filling for pie, bread roll, jelly roll, cheesecake etc. It also makes a lovely glaze on chicken and turkey with the addition of red chili pepper. Last but not least, this makes great holiday gift!!

It's very easy to make. I cooked cranberries in orange juice and sugar for 15 minutes over medium low heat; then I used hand blender to make it smooth. But if you like chunky jam just skip the blending process. Jam thickens after cooling down completely. Unlike other jams I didn't need to add pectin as cranberries are higher in pectin. Transfer to a clean jar and store in the refrigerator up to two weeks. It's gluten free, grain free and vegan!

Ingredients~
2 lb. fresh cranberries
2-2 1/2 cups raw sugar
1 cup freshly squeezed orange juice
1 tsp orange zest

Method~
Place first three ingredients in a heavy bottomed medium sauce pan. Bring it to a boil over high heat stirring constantly for 2-3 minutes. Reduce heat to low medium, cover and simmer for 10-12  minutes until cranberries soften and mixture thicken. Use a hand blender to make jam smooth texture. Taste and adjust sweetness level. At last add in orange zest and cook for a couple of minutes. Let it cool for a while and store in clean jars. Let it cool completely before storing in the refrigerator. Happy holiday cooking!

Happy Holidays!!
