Bastani Sonnati, a simple Iranian traditional ice cream also known as Persian ice cream. It is made from milk, sugar, rose water, saffron, and pistachios. We had this ice cream at an Iranian restaurant and the sever explained how easy it was to make with just a few ingredients at home.
This is an excellent show stopping dessert for family and parties. The saffron, the rose water and the coarsely ground of pistachio nuts adds an amazing flavor. I use heavy cream and the full fat milk for creamier texture. You don't need an ice cream maker to churn. An hand held electric whisk or beater does the wonder and then leave in the freezer for 6-7 hours. This is worth trying it!
1 1/2 cups heavy cream
1 1/2 cups whole milk
1 1/8 cup sugar or as per taste
1/2 cup coarsely ground raw pistachios
1/4 tsp saffron threads
1 tsp rose water
Method~
Place whisk attachment or beater and the bowl in the fridge for at least 2 hours. Boil milk in a heavy bottomed pan till it is reduced down to 1 cup. Add sugar and boil for 8-10 minutes until thickens. Stir saffron threads in the hot milk. Cool it completely and chill in the refrigerator. Whisk or beat everything together in the chilled bowl until well blended. Transfer to a freezer safe container. Place a plastic wrap on top of the ice cream to avoid ice crystal and put a lid on it. Freeze for at least 8 hours. Scoop and serve.
