Besan Barfi and Laddo/Chickpea Flour Fudge


Dipabali/Diwali, the festival of lights is celebrated which signifies the victory good over evil. Some households worship Ma Laxmi for peace, prosperity and happiness for this auspicious celebration. On this joyous occasion of Diwali I am sharing one of the most popular Indian desserts "Besan Barfi/Laddo", made of husked black chickpea flour, ghee, sugar, cardamom and nuts. 







Besan Barfi/Laddo is decadent grain free buttery fudge and it's a real go-to recipe which is tried and tested many times. It takes only 30 minutes to prepare and so very easy to follow. Usually fine chickpea flour is used; but adding little coarsely ground chickpea flour gives better texture. The great thing about this recipe is whether to make fudge shape or round shape up to your preference. Chickpea flour has a very acquired taste; so dry roasting for the first 10 minutes is very important followed by roasting in ghee. Do not skip this step! 


Ingredients~ 
(US customary units) 
1/4 cup husked coarse black chickpea flour(laddu besan)
3/4 cup husked fine black chick pea flour(besan)
1 cup superfine sugar
1/2 cup melted ghee
1/4 cup whole or half n half milk
1/2 tsp freshly ground cardamom
1-2 tbsp coarsely ground pistachio
1 tbsp coarsely ground almond

Method~
Grind sugar until powdery and set aside. Dry roast chickpea flour over medium-low heat for 8-10 minutes without browning it. Slowly pour melted ghee in the pan and roast for 5-6 minutes until it releases delicious toasty aroma. Add 1/4 cup milk. The chickpea flour will sizzle and keep stirring, then add sugar and stir continuously to combine for 2-3 minutes. Once chickpea flour mixture turns pasty sprinkle cardamom and stir to incorporate. Spread the mixture on a parchment paper lined or a greased plate. Sprinkle pistachio and almond on top of the barfi and press gently with a spatula. Let it cool completely. Cut into desired shapes and sizes. Or, make round balls into desired sizes. Store in a closed container. Happy Dipaboli/ Diwali from our home to yours!
