Turkey Shepherd's Pie

                                            


We had a big fancy Thanksgiving dinner with a soft n succulent turkey roasted by my friend and I knew I would make Sheppard's Turkey Pie with leftover turkey. What a wonderful way to gobble up leftover turkey!
                                     

Shepard's Pie was invented in England and traditionally made with roasted lamb. Regardless of what type of meat is used, this pie, a layered casserole, consisting of meat, vegetables, herbs, creamy mashed potatoes on top and baked in the oven until brown. But this version of pie is to create another delish one dish meal with leftover turkey from our big Thanksgiving dinner. This is quick n easy. It takes about 25-30 minutes.


Ingredients~
8oz cups pulled roasted turkey (I used mostly white meat) cut into small pieces
1 cup shredded carrot
1/2 cup green peas
1/2 cup chopped onion
2 garlic cloves,chopped
1/4 tsp dried thyme
Black pepper to taste
1/2 cup gravy
2 cups mashed potatoes
1 tbsp unsalted butter

Method~
In a large pan(9 inch cast iron skillet), melt the butter and saute carrot, peas, onion and garlic over medium heat  for five minutes. Add in gravy and bring to a boil. Stir in turkey  meat and let it just heat through. Sprinkle dried thyme and black pepper. Remove from heat.


In the mean time preheat  oven 400 degree Fahrenheit. Now transfer the turkey mixture to a pie dish. I cooked and used same pan for pie dish. Spread mashed potatoes on the top of the turkey mixture. With the back of a fork make some decorative marks. Bake for 20 minutes and broil for light golden brown color for 2-3 minutes. If ceramic/glass pie dish is used, make sure it is broil proof otherwise it will explode. Take it out from the oven. Be careful, it will be very hot. Wait for few minutes to cool a bit before serving. Makes 4 servings.
