Rum soaked dry fruits


Christmas is right around the corner and Rum soaked fruit cake is one of a must treats in Christmas. So it's time to soak dry fruits in rum for at least 2 weeks so they absorb the flavor of rum that makes cake super delicious. I have used six types of dry fruits and soaked them in Bacardi Gold Rum. You can use any dry fruits, candid peels and nuts. Add alcohol of your choice to soak the fruits.


 

Ingredients~

1/2 cup cherries
1/2 cup apricots
1/2 cup raisins
1/2 cup cranberries
1/2 cup pineapple
1/2 cup dates
1 1/2 cup gold or dark rum or brandy

Method~
Chop dates and apricots into small pieces.  Pineapple was diced already. I didn't chop raisins, cherries and cranberries. Take a sterile wide mouth glass jar with a tight fitting lid and place all fruits in the jar. Pour rum over the mixed fruits and stir well to combine. Seal the jar and store in a cool dark place. Check 2-3 days later. If it looks bit dry add 1/8 cup more rum and stir well again. Use as needed.
