Kamola Rasmalai/Orange Cheese Dumpling in Orange Cream

Rasmalai, a flat Rashogolla/Sweet Cheese Dumpling dunked in a thick milky sauce, flavored with cardamom and saffron and garnished with pistachios. Kamola Rasmalai is a citrusy twist to Rashomlai and prepared with Kamola Bhog or orange flavored Rashogolla and soaked in the orange juice infused thickened milk. 
Combining orange juice and milk is very tricky. There is a high chance for milk to get curdled when mixing with orange juice. It was my first time making this wonderful sweet and an undivided attention was paid as usual while making this delicate sweet to avoid disappointment. I am so glad that Kamola Rashomalai turned out awesomely delicious bursting with orange flavor.

Ingredients for the orange malai~
1 1/2  cups half n half or whole milk
3/4 cup freshly squeezed orange juice(without pulp)
1/8 tsp. orange zest
2 tbsp. sugar
1/2 tsp coarsely ground pistachio 

Method~
Drain Kamola Bhog once cooled. Boil half n half or whole milk in a large pan over medium-low heat until reduced by half stirring often. Add flat Kamola Bhog to the boiling milk and let it cook for few minutes.Turn off the heat and set aside. Boil orange juice in a small pan over medium heat until juice becomes gel consistency (almost reduced by half). Stir in sugar. Taste and adjust sugar depending on the sourness of the orange juice. Let it cool completely. Once soaked Kamola Bhog and orange juice cooled mix some thickened milk and orange juice very well. Pour juice mixture over Kamola Bhog. Transfer them to a serving bowl or a platter and chill in the refrigerator for a while. Garnish with orange zest and ground pistachio. Enjoy heavenly Kamola Rashomalai with dear ones.
