Orange Crumb Cake


Sweeten Mother's Day with this citrus infused crumb cake. This recipe is so easy for kids too, just need adult supervision. I am sure all moms will appreciate in the morning of this special day with a cup of tea or coffee. I have added some dried fruit pieces in the crumb mixture but it's totally optional.

Ingredients~
For the crumbs:
1/2 cup all purpose flour
2 tbsp. unsalted butter
2 tbsp. brown sugar
1 tsp. orange juice
1/2 cup dried fruit pieces(optional)

For the cake:
1 1/2 cups sifted all purpose flour
3/4 cup sugar
2 large eggs
1/4 cup butter + 1 tbsp. melted butter or flavorless oil.
1/4 oil
1/2 cup freshly squeezed orange juice
1 tsp orange zest
1 1/2 tsp. baking powder
1/4 tsp. salt 

For the orange glaze: 
1/2 cup freshly squeezed orange juice
1/4 cup powdered sugar


Method~
For the glaze, simmer orange juice and powdered sugar in a small sauce pan on medium low heat until reduced by half. Set aside.

Preheat oven to 350 degrees Fahrenheit. Arrange rack in the center of the oven. Grease a 7 or 8 inch spring form pan with 1 tbsp. melted butter or oil and set aside. To make the crumb mixture, mix flour and brown sugar, orange juice and cold butter. Blend together with a pastry blender or finger tips until mixture becomes a coarse meal. Add in dried fruits and mix well if using. Set aside. 

Mix flour, baking powder and salt. Whisk together eggs, sugar, butter orange zest and orange juice. Then fold flour mixture into egg mixture. Pour batter onto the greased pan and sprinkle evenly with the crumb mixture onto the top of the cake batter. Tap the pan a couple of time to get rid of the air bubbles.

Bake for 30 -35 minutes or until tooth pick inserted into center comes out clean. Cool completely on a wire rack. Remove from the pan and drizzle orange glaze on top. Enjoy Orange Crumb Cake with family or friends. Store cake in the refrigerator for up to a week. Happy Mother's Day to all wonderful mothers out there.
