Coconut Hot Chocolate


December is the best festive month of the year and the festivities begin during the Thanksgiving holiday followed by Christmas and New Year's Day. It's the time of the year we try to forget our worries for a while. The Santa Clause, The Christmas tree, the Christmas carols, the twinkling lights, the presents, the get together, the shopping spree, the festive food and drinks put us in a joyful and positive mood. I always tend to get a little carried away. It's so wonderful to listen to Christmas songs all day through Christmas Day on our favorite radio station especially while waking up and falling asleep at night.


But once the Christmas is over and the alarm goes off December 26 in the morning regular songs begins to play and I almost feel like crying. We have to wait for Christmas until next year and I feel the blues for a few days every year. I wonder how fast another year has gone by. But I am glad to find my way moving on from Christmas blues quickly and looking forward to the new year. As we keep our Christmas tree, decoration and lights up until school opens to keep the festivities going on, we will have some fun time and celebrate the New year's eve.


Now coming back to the recipe. Hot chocolate is so comforting to warm up on chilly winter nights. I have been making this vegan version for a while inspired by vegan coffee I love with coconut milk. It tastes surprisingly delicious. When it comes to non dairy milk I stick to coconut milk only. It's a great alternative for the lactose intolerant people. Thay can also enjoy hot chocolate without  worrying. It's rich, flavorful and creamy. If you love tropical flavor then it's a must try. All you need is coconut milk, coco powder and raw sugar or coconut sugar. To make it more festive top with some vegan marshmallows and chocolate drizzle. It's absolutely delicious. 

Ingredients~ 
1 cup coconut milk
1 cup water
2 tbsp. unsweetened coco powder
2 tsp. coconut/raw sugar or as per taste
Vegan marshmallows(optional)
Candy cane (optional)
1/8 cup dairy free dark chocolate
A few drop of flavorless oil

Method~
Combine coconut milk and water into a saucepan over medium flame and bring to a boil. Turn off the heat. Add coco powder and coconut or raw sugar into hot milk and froth it using a whisk. Keep whisking until smooth and frothy then pour into two mugs. Melt chocolate and oil in a microwave safe bowl for 30 seconds. Give it a good stir. Garnish with marshmallows, candy canes and drizzle melted chocolate over marshmallow toppings. Serve warm. Happy New year 2018 from our family to yours!!
