Baked Lemon Garlic Dill Catfish


Ending the last day of the decade 2019 with a simple  yet scrumptious fish meal recipe that is ready for less than an hour from start to serve and full of hearty goodness of veggies and fresh fish. Just a few ingredients and the result is fantastic. This fish meal is super low carb to serve as is but you can serve any healthy grain like quinoa or brown rice on the side. 


Fish and seafood are the main lean protein we consume most of the time and baked/grilled fish with vegetables is the simplest way to turn busy day lunch or dinner into a tasty meal with just a few pantry ingredients. Lemon, garlic and dill are a wonderful combination for any baked and grilled recipe. I make a rub with minced garlic, lemon zest, lemon juice, olive oil, salt and pepper and let it marinate for about ten minutes and the flavor is awesome. 

Ingredients~
5-6 pieces good size catfish steaks( about 1 1/4 lb)
2 tbsp freshly squeezed lemon/lime juice
1/2 tsp lemon zest
2 tbsp olive oil or any white oil
1 tbsp minced garlic 
1 tsp salt or to taste
1/4 tsp freshly ground black pepper
1/4 tsp dill weed

Vegetables:
2 big bell peppers 
2 medium onions, cut into chunks
2 cups cherry or grape tomatoes
1-2 small zucchini, cut into thick slices
A few lemon/lime slices
8-10 bamboo wooden skewers, soaked in water for 10 minutes

Method~
Mix all the marinade ingredients together and rub well all over fish pieces and vegetables. Leave for 10 minutes. 

Preheat the oven to 450 degrees Fahrenheit. Alternately thread vegetables into the wooden skewers. Arrange fish steaks and veggies in a baking sheet or use two small baking pan. Place lemon or lime slices over fish pieces. Bake for 20 minutes turning once until fish is cooked through and veggies are nicely browned. Let it cool little bit. Garnish with lemon/lime wedges. Serve as is or over brown rice or quinoa. Have a healthy new year 2020!
