Bhatura/Bhature is a very soft, chewy, leavened, deep fried, puffy white North Indian bread served with Choley/Chana Masala. This famous North Indian delicacy is popular all over the world savored as a delicious meal for breakfast, brunch or dinner. The combo of Choley and Bhatura is match made in heaven.
Bhature dough is made with white flour, some leavening agents, salt, sugar and oil. Bhature is thicker than regular Indian fried bread called Poori or Lucchi. The dough can be made with either yeast or yogurt, baking powder and baking soda. I use baking powder and baking soda. I make it vegan and it's easy to create vegan yogurt and buttermilk (if recipe requires) using any non dairy milk stirring with lemon juice or apple cider vinegar. This is an instant dough that is kneaded very well for 5-6 minutes until smooth, then rolled it, fried it in hot oil and it comes out moist, soft and chewy.
Bhaturey comes in usually big sizes and different shapes sometimes. Be it big, round/oval or small sizes, Bhaturey served with Choley and some salad is so irresistible. You can prepare this dish with some easily available simple pantry ingredients. Choley-Bhaturey

Ingredients~
2 cup sifted all-purpose flour
2 tablespoon fine semolina
1/3 tsp baking powder
1/8 tsp baking soda
1/3 teaspoon salt
(1/2 tsp sugar if using unsweetened nondairy milk)
1/2 cup sweetened non dairy milk
1 tsp apple cider vinegar or lemon juice or white vinegar
2 tablespoon oil
3/4 cup lukewarm water or as needed
1 1/2 cup for frying
Method~
In a small bowl stir non-dairy milk and apple cider vinegar/lemon juice and set aside. Combine first five ingredients in a bowl and give it a good stir. Add oil and milk mixture. Knead the dough using water 1/4 cup at a time. Knead it very well for 5-6 minutes until very smooth and semi soft. Divide into eight or ten equal portions(depending on the size you want to make). Roll the balls in whatever shape you like. Heat oil in a kadhai or pan over medium high heat and deep fry till light brown on both sides. Drain on a paper towel. Serve with Choley/Chana Masala.
