We love this wholesome and nutritious Asian flavored rice with veggies. It's so versatile to pair with any Asian vegetable dishes, seafood, chicken and meat items. Easy to cook with left over brown rice.
Brown rice is staple in our family. Its insoluble fiber, chewy nutty texture easily satisfy rice craving without guilt. Brown rice takes much longer time to cook than white rice because of its bran. Soaking for several hours reduces cooking time. I used to do it in the beginning but it is not always possible to remember. So the trick is to cook faster using pressure cooker. It still takes 30 -35 minutes from start to finish. The only difference is cooking time 20 minutes but the pressure needs to be released naturally.
I love fresh seasonal vegetables or whatever I have. Mostly I use green beans, carrots, peas and scallions. Simple seasonings, fresh grated ginger, soy sauce and pepper, little sesame oil are all you need. I do recommend to use fresh scallions and fresh ginger for authentic Asian taste.
Ingredients~
2 cups cooked brown rice
2 1/2 cups green beans, carrots and peas, cut into small pieces1 tsp grated ginger
2 tbsp white oil
2 tbsp white oil
1 tsp sesame oil
2 tbsp soy sauce
1/8 tsp freshly ground black pepper
2 tbsp soy sauce
1/8 tsp freshly ground black pepper
2 slightly slit green chilies
1/8 tsp salt or to taste
1/4 cup chopped scallion
Method~
Wash 1 cup brown rice 3-4 times with cold water. Pressure cook on high with 2 cups of water till one whistle then reduce heat to low and cook for 10 more minutes. Turn off the heat and let pressure release naturally. Leave it 10 minutes further then fluff off with a fork. If using fresh rice let it come to room temperature and for leftover rice warm it up little bit(do not make it hot) before mixing with the veggies
Heat oil in a medium-large pan over high heat. Once oil is hot add ginger, mixed veggies. Saute on high heat for a minute then reduce heat to medium flame. Stir in green chilies, pepper and salt and; Keep sauteing veggies until tender. Stir in warm rice and soy sauce to mix up well. Taste and adjust seasonings as needed. Drizzle sesame oil over the rice mixture and give it a good stir. Garnished with finely chopped spring onion. Serve with Asian veggie dish, seafood, chicken or meat dishes.
