DOLO



Dolo, a very popular pitha in winter of Nadia district, West Bengal which is quite similar to Dudhpuli( rice flour dumpling dunked in the thickened milk). My aunt learned from her mother-in-law. My cousin sent me the recipe almost two years back. Finally I made this simply delicious sweet following exact method she provided. All ingredients are easily available.


Ingredients~
1 cup freshly grated coconut
1 cup rice flour(preferably gobindobhog flour)
1 1/2 cup unsulfured  date palm jaggery
3 1/2 cup milk
1 bay leaf

Method~
Mix coconut, rice flour and 1/4 cup jaggery to form a medium soft dough. Make small flat balls. Boil milk in a heavy bottom pan. Add in jaggery and bay leaf. Make sure to use unsulfured date palm jaggery or else milk will be curdled the moment it touches the hot milk. Drop the balls into the boiled milk. Let it cook for 3-4 minutes. Milk will thicken very soon. Gently keep on turning the ball in the milk so they don't stick to the bottom or move the pan in a circular motion. Sweeten the milk with additional jaggery as per taste.  Cool completely before serving. You can serve at room temperature or chilled. Happy Winter!
