Nalengurer Roshbora


Roshbora/White lentil fritters soaked in date palm jaggery syrup is a popular winter dessert in Bengali household, not sold in stores. Only four ingredients needed and very simple to make. Sugar syrup can be used but date palm jaggery really makes these fritters heavenly delicious. 



Ingredients~
1 cup dry white lentil(urad dal) 
1 tsp. crushed fennel seeds
2 1/2 cups nalen gur(date palm jaggery)
2 1/2 cups water
2 cups oil

Method~
Wash dal thoroughly and soak in enough water couple of hours. Drain the water and grind it to a smooth paste, sprinkle little water if needed. Then add the crushed fennel seeds to the batter and using a metal whisk or hand mixer whip the batter till light and fluffy for 5 minutes. 

For the syrup, bring the water and jaggery to a boil in a large saucepan over medium heat until jagery dissolves completely. keep it warm.  

Heat oil in a heavy pot. Carefully drop a spoonful of the batter into the hot oil and fry until golden brown on both sides. Drain them on paper towel and drop in the warm syrup. Let them soak at least 3-4  hours before serving.
