Chicken Yahkni Pulao

Yakhni Pulao is a very easy amazingly delicious rice and meat dish that I make for special weekend meal sometimes. This Kashmiri specialty rice dish originated in the Middle East and brought by Mughal rulers. Yakhni in Persian language means stock of meat with aromatic spices where meat is semi cooked first, drained and sauteed with spices then rice and meat are cooked in the favored stock over low heat. Yakhni adds a depth of flavor that gives the richness to the Pulao. This one dish rice meal is so irresistible that we don't mind having the leftovers the next day.

Persian Love Cake

Persian cuisine is all time family favorite, be it sweet or savory. When I first time made this unique cake 5 months back, I was quite skeptical about using ground almond and pistachio in the cake batter. But it turned out so delicious and moist, infused with a distinctive Persian flavor. It rose so beautifully and we loved its perfect balance of cardamom, rose water and saffron flavor.The cake was not too sweet but incredibly rich and delicious. My tween made it a few days back with a little bit of help from me and it turned out great. She made Bastani Sonnati also known as Persian Ice Cream as well and I paired it with Persian Love Cake. Trust me, it takes to a whole new level.

Bastani Sonnati/Persian Ice Cream


Bastani Sonnati, a simple Iranian traditional ice cream also known  as Persian ice cream. It is made from milk, sugar, rose water, saffron, and pistachios. We had this ice cream at an Iranian restaurant and the sever explained how easy it was to make with just a few ingredients at home.
